Long evenings and chilly nights call for warm, grounding, nurturing drinks. I created this recipe a few years ago after a friend served me her delicious intuitive pumpkin chai concoction. I was immediately nourished, warmed and satisfied. Ingredients

  • 4 Yogi Tea India Spice tea bags (or similar chai tea)
  • 2 c. pureed cooked pumpkin
  • 1 can organic coconut milk (full-fat or light)
  • 2 T. raw, organic honey
  • 3/4 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ground ginger
  • 1/8 tsp. ground cloves

Brew the tea in almost boiling water; steep well.  On stovetop combine pumpkin, coconut milk and spices in medium saucepan; heat through.  Pour into blender with cooled tea and honey; blend.  Return to saucepan and heat through again before serving.

Wrap your hands around the warm mug, snuggle in beneath a cozy blanket, and gaze into a fire or the eyes of a friend or the colorful scene of your home.
